THE birthday cake in our house was Mom’s Midnight Cake with the 7-minute frosting. A super dark chocolate cake with a fluffy white vanilla frosting. It was great when it was first made, but the next day, the frosting was slightly crystallized and I liked that even better!
This would be a perfect day for that cake!

I just found this post and wanted to comment. Every birthday cake in my growing years had 7 minute frosting on it. I still dream of that goey goodness! I laughed when I read that you like the crystalized sugar day after. That, too, is one of my favorite! Thank you for the post!
